Winemaking:
At harvest, the carefully selected grapes are processed by soft pressing, after which fermentation proceeds partly in temperature-controlled steel tanks and 10% in barriques. The base sparkling wine is aged on its fine lees for 7 months with weekly battonages. Bottle aging lasts at least 24 months.
Tasting notes:
Straw yellow color. The nose features notes of bread crust and yeast complemented by floral hints. On the palate, it is full-bodied and balanced with a long persistence guaranteed by a good acidic content.
