Vineyard: South-West facing on steeply sloping terraces (in Pianora on Montorfano) at 280 meters above sea level.
Training system: Guyot with 3000 plants/ha
Average age of vines: 16 years
Yield per hectare: 50 quintals/ha
Harvest: from mid-September to early October, with fully ripe grapes, exclusively by hand in small crates.
Vinification: separate, in stainless steel tanks
Aging: In second and third-passage French oak barrels (barriques)
Bottle aging: 8 months
Production: 1000 bottles
Food pairings: cured meats and aged cheeses, red meats and game, pasta dishes with meat sauces, preparations where the fatty component is significant
Alcohol: 14%
