PRINCIC JAKOT FRIULANO GORISKA BRDA 2023 CL 75
The Princic Jakot Friulano Goriska Brda is a wine made from the vinification of Jakot grapes, the name by which the Slovenian people call the Friulano grapes that grow on the border between Italy and Slovenia within the Collio Goriziano area. The result of a short maceration on the skins, following the historic Slovenian tradition, it is a kaleidoscopic wine capable of not only telling the story of the territory but also providing an insight into the centuries-old Slovenian winemaking techniques that are able to provide great aroma and longevity to the wines obtained from this varietal.
Production and winemaking methods and techniques
The Princic Jakot Friulano Goriska Brda is produced starting from late September, when the ripe grapes are harvested and brought to the cellar. Here they undergo soft pressing and draining, with a short maceration of 36 hours on the skins. The must obtained undergoes alcoholic fermentation in steel tanks at a controlled temperature of 14-16°C. Before being bottled and left to age in the bottle, the wine is left to mature for several months in steel tanks.
Sensory experience and pairings
The Princic Jakot Friulano Goriska Brda is a golden yellow wine that releases aromas of ripe white peach, apricot, and ripe apple, banana, then turning to scents reminiscent of acacia, linden, and jasmine flowers, with slight herbaceous notes and spices such as white pepper and nutmeg on the finish. The sip is more than fresh, with a good balance between softness and hardness that leaves the palate in harmony; with good persistence. Ideal for pairing with appetizers and small structured aperitifs such as meat or fish meatballs with sauces, it pairs excellently with fish-based preparations with a slight fatty tendency or with crustaceans. An excellent pairing is with San Daniele raw ham.
