Production area: Solinga Valley.
Soil: sandy-pebbly.
Vineyards: steeply sloped, south-facing.
Grape varieties: Croatina, Barbera, and Uva Rara.
Vinification: the grapes are hand-picked, destemmed, and pumped into stainless steel tanks where they ferment at a controlled temperature. The must macerates in contact with the skins for 4-5 days. Alcoholic fermentation is interrupted by filtration and racking at a low alcohol content to maintain a high residual sugar. The wine is chilled, and after a few months, it is placed in an autoclave with the natural grape sugars for the secondary fermentation (prise de mousse). Before bottling, the wine is microfiltered. The bottles rest for a short period, laid horizontally in the dark, before being released to the market.
Tasting notes: it presents an almost impenetrable ruby red color with violet reflections. The nose is fruity, fragrant, with hints of strawberry, blackcurrant, sour cherry, and a note of aromatic herbs. On the palate, it is moderately sweet, harmonious, full, and easy to drink. Pairings: red fruit-based desserts are its ideal match. Also excellent with dry pastries. Some daringly pair it with spicy Gorgonzola for contrast.
