La Fiorita Dosaggio Zero cl 75
Dry and vertical wine, with prominent citrus and balsamic notes. The absence of dosage allows the full appreciation of both the primary aromas of the grapes and the secondary aromas of fermentation. Acidity and sapidity give the sip exceptional length.

Plant density: approximately 5,500 vines per hectare
Production: approximately 65 hectoliters/hectare
Harvest: manual picking and selection of bunches (as required by the Franciacorta DOCG production regulations) into approximately 15 kg crates.
Harvest period: August and the first ten days of September
Vinification: soft pressing without maceration, fermentation in stainless steel at 16°C and subsequent aging on fine lees for at least 6 months, malolactic fermentation not carried out. Each vineyard and each pressing are vinified separately, in order to best enhance the characteristics of the grapes, soils, and vintage. Only after the first 6 months of aging are the base wines tasted to determine if, and in what percentages, to blend them to form the definitive Franciacorta base.
Bottle aging: minimum 18 months on lees (as required by the Franciacorta DOCG production regulations)

Recommended serving temperature: 7-8°C
Pairings: a wine that requires strong pairings such as cured meats and structured cheeses; it also pairs well with baked game and typical first courses of the Brescia tradition.
