microelements, particularly magnesium

Vinification: alcoholic fermentation in 55hl oak vats, 15 days in contact
with the skins using the gentle shower cap wetting system, temperature
30°/ 27° C. Malolactic fermentation in vat
Aging: 30 months in total, of which an average of one year in wood. 50%
matures in barriques, the other 50% in large barrels. After blending, the wine ages in
bottle for a further 18 months
Colour: purplish with brilliant ruby reflections
Aroma: broad, intense, elegant with notes of black cherry, cocoa, coffee
Taste: great structure, fresh, velvety with a long and silky finish
Pairings: agnolotti with roast sauce, tagliolini with porcini mushrooms, roast veal,
well-aged cheeses
