Vinification: manual harvest with selection of bunches; 60% of the grapes: soft pressing in a pneumatic press and fermentation in steel at controlled temperature; remaining 40%: skin cryomaceration with fermentation in new and first-passage barriques. Aging: 7 months, in steel or in barriques.
Secondary Fermentation: in the spring following the harvest. Aging on lees: at least 36 months.
Aging after disgorgement: 3-4 months. Number of bottles produced: 5,000
Organoleptic characteristics: brilliant golden yellow, exuberant and persistent perlage, intense and persuasive on the nose, with floral, spicy, and bread crust notes; on the palate it is dry, elegant, and with remarkable persistence.
Pairings: pasta dishes, fish, even aged cheeses, white meats.
